Contacts Missing Last Name

I'm wondering if anyone else has experienced this.

For some reason a lot of my contact's last names are disappearing. When I go into the contact to edit it and add it back I go to Add Field, but Last Name isn't listed for me to add back. So I end up having to type the whole name into the First name field.

Anyone have any thoughts?
